Yesterday I managed to make the most delicious chocolate protein pancakes I’ve ever tasted! They seriously were so tasty. These are perfect for a longer and slower weekend morning, when you have a little bit more time to cook. My morning started by reading a book and just staying in bed, then getting up, cooking and actually enjoying the breakfast.
Very often protein pancakes taste like just flour, are super dry and tasteless or just lack that perfect consistency. Well, these chocolate protein pancakes didn’t have any of those problems. They were soft, moist and just super delicious. Here’s the recipe:
1 dl of protein powder (I used unflavored soy-protein)
1 tsp of chocolate powder (unnecessary if you use chocolate flavored protein powder)
½ dl milk (I used oat milk)
A pinch of cinnamon, vanilla sugar and baking powder
Mix everything together in a blender and bake on a frying pan. I used coconut oil for frying but butter is just as good. Add berries, fruits, honey or syrup to taste. Enjoy! This recipe made 12 small pancakes, and oh boy I was stuffed after finishing my breakfast. You can also add some variety to the recipe by using different spices or different flavored protein powder. My go-to everyday breakfast is as simple as mixing together a smashed banana, 2 eggs and baking it on a pan in butter.
If you like Matcha Latte, you can easily make it at home! Mix just a half teaspoon of matcha powder and a small amount of boiled water together in a cup. Then bring milk to boil (I used oat milk for this one as well) in a pot and froth it. Pour the frothed milk into the cup on the matcha tea, continuously mixing them together. And enjoy!
