As my lunch recipes seem to be quite popular on my Instagram stories, I though I could share my current favourite here. This Crunchy Thai Quinoa Salad is delicious, healthy, filling and so easy to make.
Everything in this salad is good for you. Carrots are packed with vitamin A and capsicums with antioxidants. Besides being anti-inflammatory, red cabbage is packed with vitamin C and brings the nice crunchy texture. The salad is light but still full of protein, thanks to quinoa, cashews and peanut butter. I usually cook this on a Sunday and it makes 3 days worth of lunches for both my boyfriend and me. It’s so much easier to eat healthy and stay away from temptations when you have yummy lunch with you. Not to mention how much money you save when you cook a big batch of something at home instead of buying pre made lunch everyday.
Crunchy Thai Quinoa Salad
3dl Quinoa
6dl Water (for cooking the quinoa)
3 Carrots shredded
2 Capsicums chopped
¼ Red cabbage sliced
Handful of cashews chopped
Handful of coriander chopped
The dressing:
1 Lime
¾ dl Peanut butter
2 tbsp GF Soy sauce
1 tbsp Maple syrup or such
1 tsp Ground ginger
½ dl Water
Instructions
Cook the quinoa. I always add vegetable stock powder/cube in the water for more flavour. Prepare and chop the vegetables and mix them all together with the cooked quinoa.
For the dressing: Squeeze the lime juice. Place all the ingredients in a cup and add water last. Mix until smooth and pour on the salad and mix it all in.
