As you already know, I love breakfast. Both slow weekend morning brekkies and quick everyday brekkie moments. I know that breakfast is not for everyone – some people like to skip the whole thing, and some people have it later in the morning.
Besides loving breakfast, I love routines in the morning. For the past 9 months I’ve had the same routine on every weekday morning. I wake up, do yoga if there’s enough time, wash my face, brush my teeth and do a quick 5 min make-up. And then the fun begins. I boil some water for a cup of tea, mix greens powder (spirulina, barley grass, wheat grass & chlorella) with water in a glass and quickly prepare my breakfast. Then while eating, I sit on the couch and write down five things I’m grateful for in my gratitude journal. I think that’s a great way to start a day because it forces me to think positive thoughts as the first thing in the morning! Then before leaving for work I fill up a bottle with water and one tablespoon of apple cider vinegar.
The reason why I have a super greens powder drink in the morning is that it boosts my metabolism. It is great for anyone who suffers from constipation or who wants to detox their system in the morning. Apple cider vinegar, on the other hand, lowers your blood sugar level and is anti-inflammatory, which means that it helps to kill harmful bacteria in your body.
Anyway, here are some super easy weekday breakfast ideas that I make very often. In my case skipping breakfast will lead to more snacking later in the day, so I want to inspire everyone else to eat breakfast as well.
- Avocado toast. Literally takes 1 minute to prepare. Avocado keeps you full longer, thanks to its high fat content. I love avocado toast with just salt on it, but it’s super yummy with lemon juice, pepper or a fried egg.
- Buckwheat-quinoa muesli with plant-based milk, blueberries, banana and peanut butter. Muesli and granola are good breakfast options but most of them are packed with sugar. So check what you’re buying! If you eat sugary muesli for breakfast, it will make your blood sugar go up and already before midday you’ll be starving and in a serious need of a coffee. I prefer plant-based milks because I try to stay away from dairy products as much I can, and oat milks is my favourite with muesli as it doesn’t have s strong side taste.
- Overnight oats. Very often I feel super lazy in the evenings and don’t really want to start preparing my breakfast. But when I do prepare it beforehand, I always thank myself in the morning. Easy weekday overnight oats
[one-half-first]½ banana, mashed
1 tbsp chia seeds
2 tbsp protein powder
1dl plant-based milk [/one-half-first]
[one-half]Mash the banana in an airtight jar. Add all the remaining ingredients and mix together. Add more milk if you like a bit runnier consistency. Place in the fridge overnight and enjoy in the morning.[/one-half]
